Sriracha shrimp flatbread sandwich

Ingredients

Sandwich

  • 3 ounces cooked shrimp (cleaned)
  • 1/8 teaspoon Sriracha sauce
  • 1 tablespoon low-fat mayonnaise
  • 1 whole wheat pita (sliced down the middle)
  • 1/4 fresh avocado
  • 2 slices of tomato
  • 3 slices of cucumber
  • 2 leaves of field greens

Roasted Carrots and Grapes with Tarragon

  • 1 pound of whole carrots (peeled)
  • 1 cup white grapes
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 tablespoons fresh orange juice
  • 1 teaspoon fresh tarragon (chopped fine)

Directions

Sandwich

Mix shrimp with mayonnaise and Sriracha sauce. Spoon mixture on half of flatbread. Add remaining ingredients on top with second half of flatbread. (1 serving)

Roasted Carrots and Grapes with Tarragon

Toss together all ingredients except tarragon. Place on sheet pan and roast at 350 degrees for 15-20 minutes (until tender). After roasting, mix with fresh tarragon. Serve warm. (4 servings)
