Verde Grilled Chicken with Mango and Serrano Pepper Salsa

  • 1 six-ounce boneless/skinless chicken breast
  • 1 tablespoon minced cilantro
  • 1 tablespoon minced parsley
  • 1 tablespoon minced jalapeño
  • 1 tablespoon extra virgin olive oil
  • 1/2 lemon (juiced)
  • 1/2 cup water


In a skillet, grill chicken until cooked through, about five minutes each side. Remove chicken from pan and turn down heat. Add water and scrape pan. Add remaining ingredients and heat slightly. Spoon mixture over cooked chicken breast.
