Panzanella Salad

Ingredients

  • 4 Cup rustic bread, cubed and toasted in oven
  • 1 Tbs. sherry or red wine vinegar
  • ½ Cup extra virgin olive oil
  • 1 clove garlic, minced
  • 1 Cup red onion, thinly sliced
  • 5 vine ripe tomatoes, cubed
  • ¼ Cup italian parsley
  • Pinch kosher salt (less than 1/8 tsp.)

Directions

Combine and mix ingredients in a bowl.
